Chef Preeti Mistry's podcast showcases Gujarati samosas, a different version of the more popular Punjabi samosas, featuring a thinner, crispier crust that's a touch more complicated to make. Preeti, who was a contestant on Top Chef Season 6 and currently hosts the culinary podcast Loading Dock Talks, learned the recipe from Pushpa Ben, a Gujarati woman in their hometown of Toledo, Ohio. The dish has since become a staple in Mistry's household for Diwali celebrations and beyond. During the episode, you'll hear the beats of chopping, pulsing, and blanching ingredients, kneading and rolling dough, and the crackle of the hot pan as they fry the folded samosas. Mistry will discuss how they celebrated Diwali as a child and how they do today, and they will introduce Pushpa Ben and share the story of how they were taught the recipe from "chef to chef."

Chopped Season 28 champion and Top Chef All-Stars finalist, Chef Joe Sasto, will let you in on the sacred family lasagna recipe, a dish that's become the star of all Sasto gatherings. His secret, according to the chef, is to get the dish to taste as close to his mom's version as possible, in order to elicit maximum nostalgia through emotional connection. From the cracking and whisking of eggs for the pasta to the sizzling of onions and garlic frying up for the gravy, the sounds that come out of this magical recipe will enchant you almost as much as its flavors.
